Lemon Cauliflower in an Instant Pot Pressure Cooker

Do you want a quick, tasty and new way to serve cauliflower? Try this.

Ingredients
1 head cauliflower
Ranch Seasoning
Salt
Pepper
3/4 cup water
4 drops doTERRA Lemon Essential Oil

1.  Remove core and leaves from cauliflower head. Trim core and slice in half.

2.  Sprinkle Ranch Seasoning, salt, and pepper over bottom of cauliflower.

3.  Pour water into Instant Pot and add doTERRA Lemon Essential Oil. Set insert into pot with handles facing up.

4.  Place sliced core on rack. Add cauliflower head with the seasoned bottom facing down. Sprinkle more Ranch Seasoning, salt and pepper on top of cauliflower head.

5.  Cook on Manual for 6-8 minutes, depending on size of cauliflower. (Cook 6 minutes for small head, 7 minutes for medium-large, and 8 for a very large head.)

6.  Quick release and remove rack and cauliflower from pot and serve.

Lemon Kale

1 tablespoon olive oil
1/2 medium onion (I like red)
1 bunch organic Kale
1/2 cup dried cranberries
salt & pepper
5 drops Lemon Essential Oil

Add olive oil to pan and heat on medium. Add onions. Saute for a few minutes until they start to get tender. Add kale and cranberries. Salt and pepper to taste. After kale is mostly wilted, add lemon oil. Stir a few times and serve.

Lemon Cauliflower

I am so glad I found this combination. Just take your cauliflower florets and saute until they start to brown. Add a little water or chicken broth and 2 drops of Lemon Essential Oil. Cook until the cauliflower is tender or done to your liking. The liquid will evaporate, so keep adding water/broth as you go.
